INSPIRATION

This documentary was born from a revelation around a table. A space without waiters, where the cook refuses to call himself a chef, and where dishes have first and last names because behind them there are hands, soil, and memory. There, the invisible became visible: producers, forests, gardens, ceramics… an entire ecosystem pulsing in every bite.

At first, it wasn’t meant to be a documentary. The idea was to capture small portraits: the mise en place of the restaurant, brief scenes showing what happens before the diners arrive. But in the midst of those everyday gestures, another story began to emerge. Each frame, each word from Dani, opened the door to something deeper. What began as fragments turned into a greater narrative: the story of coherence, and of a way of being in the world that could not remain ephemeral.

Following Daniel Ochoa meant tracing the path of a rare and luminous consistency. That of someone who, in the face of adversity, chooses to remain true to his values. Who resists without giving in to what is easy. Who avoids stardom in order to stay rooted, human, genuine.

Coming Full Circle is a tribute to that resilience and humility. A defense of sustainability not as a passing label, but as a lifelong commitment. A statement that it is possible to cook –and to live– from the root, without betraying who you are, even when the world pushes in another direction.

This documentary is also an invitation. To be inspired by Dani and everything he represents: the possibility of closing our own circles with fidelity, honesty, and humanity.

To recognize that the essential is right there, close by, waiting to be seen.

Coming Full Circle is a documentary that traces the personal and professional journey of chef Daniel Ochoa, from his training and the creation of the restaurant Montia to the moment of its rebirth, one year after a fire destroyed the original premises.

Located in San Lorenzo de El Escorial, in the mountains of Madrid, Montia stands as a radical commitment to sustainability, proximity sourcing, and the coherence between life philosophy and craft.

Through an intimate, unembellished lens, the documentary explores not only the act of cooking,
but also how this daily gesture can regenerate human bonds, restore a sense of place, and propose more honest ways of inhabiting the world.

This project highlights the connection between the rural and the urban, the visible and the essential, giving voice to a singular figure who has chosen to remain faithful to his ideology, far from trends and the “celebrity chef” stereotype.

The title Coming Full Circle reflects this return to what is essential: to the land, to coherence, and to the people who sustain the project.

Coming Full Circle is not just a gastronomic documentary.
It is the portrait of a chef, yes, but above all of a man of integrity who fights for what he believes in and has become a benchmark for sustainability in fine dining.

In a sector that attracts so much media attention, Dani Ochoa chooses to go against the current: he is not seeking visibility, he is seeking coherence.

His commitment goes beyond the dishes and extends to wine.

Despite the criticism, Montia serves only natural wines: not only for their gustatory coherence, but also for the respect for the land and environment they embody.

More than ten years after embarking on this path, Dani remains true to his vision:
to grow alongside small producers and give them the recognition they deserve, closing the gap between the rural and urban worlds.

Dani combines creativity with consistency. He is able to inspire respect and loyalty in those around him, becoming a reference point for anyone searching for a more authentic way of living and cooking.
